Nourishment and wellness come together at Persimmon Bistro, sharing the beautiful gardens of Bow Sanctuary. At Persimmon, we believe food and drink can be an experience that awakens the senses, brings people together in community, and invites us all to pause and appreciate the moment.

Persimmon bistro offers a variety of light thoughtful bites, made with fresh and locally sourced ingredients. Our well-curated selection of Asian, English, and herbal teas is sure to delight. Enjoy a small pot for yourself, or share a large pot with friends. We also offer a full selection of espresso drinks,  and French press coffee.

The menu is good, but our community is what makes us special

Persimmon is a collaboration between Chef Christy and Shannon of Evolve Chocolate + Cafe and the founders of Bow Sanctuary.
Shannon and Chef Christy Fox aka The Laughing Wives arrived in Washington in 2010 with the intention of building a life together that would foster community. As their life began to grow, they soon found they had a profound respect for the region, hungry to learn more of what the area could provide. The entrepreneurs began their business life together with the creation of Evolve Truffles in 2010; expanding in 2018 they opened the successful Evolve Chocolate + Cafe in historic Fairhaven.

Over twenty years ago Beth and Brian were brought together by a shared love of good food, the outdoors, and seeking joy and silliness in their days. In the many years since their lives melded, they have lived and traveled abroad, raised two beautiful children and have always been willing to jump into adventure head first. Brian is a geologist gone aquaponics farmer. And Beth is an artist who has found home in the wellness world. They believe life is short so one must live it well, care for the earth and be kind to others. Beth and Brian strive to bring love and joy into all they do.

Brittany and Jonny have always bonded over food. From tasty bites in a camp stove, to farm to table dinners, to home made lasagna; nourishment is always a capstone to the experience. This is why food has always been a big part of their vision in creating a wellness center. They are thrilled to be a part of such a wonderful collaboration that brings the whole thing to fruition.
